The Perfect Christmas Glaze
Glaze or not to
Glaze? Everyone has their own preference and if you get your hands on a juicy, quality
ham, there is nothing better than eating it fresh. … but if you want to step it
up, try this super easy, traditional glaze – which is sure to be a hit.
Ingredients
1 cup Dark Brown Sugar
1 ½ cups Pineapple Juice
1 teaspoon Dijon Mustard
3 tablespoons Apricot Jam
Method
Step 1
Start by placing the ham, skin side up. Run a small, sharp knife under the rind. Carefully cut
around the bottom. Slide your fingers under the rind and
gently ease the rind away being careful not to tear the fat away.
Step 2
Use a sharp knife and score the fat across the ham
diagonally (making diamond shapes) and generously add cloves in between the
scores.
Step 3
Prepare the glaze by mixing ingredients over low heat for 5
minutes.
Step 4
Generously glaze your ham, and place on a wire rack inside a
baking tray (Add 2cm of water to the bottom of the tray, but be careful when
taking out of the oven!) Heat the ham at 180°C, for approx 1.5 hours. Re-glaze
your ham every 20 minutes, allowing it’s full flavour to develop. Allow to cool
and enjoy.
