White Bean & Salami Cavatelli

Hearty yet simple, this dish brings together the rich depth of Re & Sons Felino Salami with the creamy texture of white beans. A true comfort meal, perfect for a cozy night in or a rustic family dinner.

Ingredients

400g cavatelli, or pasta of choice
1 Re & Sons Felino Salami, casing removed and diced
1 shallot, finely diced
1 garlic clove, finely sliced
400g passata, or 2x tinned tomatoes 
400g tin cannellini beans, drained and rinsed
Parmesan cheese, to serve
Extra virgin olive oil (EVOO)
Salt and pepper

Method

Prepare the Sauce
In a large, low saucepan over medium-low heat, add a generous splash of olive oil.
Add the diced shallots and cook on low until translucent but not browned (about 5 minutes).
Stir in the diced Felino and sliced garlic, cooking for another minute.
Add the white beans and passata, stirring to combine.
Reduce the heat to low and let the sauce simmer for 20 minutes until thickened. 

Cook the Pasta
Meanwhile, bring a large pot of salted water to a boil.
Cook the cavatelli (or pasta of choice) until al dente.
Turn off the heat and use a slotted spoon to transfer the pasta directly into the sauce, avoiding excess starchy water.
Stir to combine and let cook for an additional minute to allow the flavours to combine.

Serve
Plate immediately and top with grated Parmesan, cracked black pepper, and a drizzle of high-quality EVOO.
