Ham & Zucchini Fritters with Lemon Yoghurt

Ingredients
Fritters:
•1 medium Zucchini, grated & squeezed dry
•1 cup chopped Re & Sons Christmas Ham
•1 Spring Onion, finely chopped
•2 Eggs
•⅓ cup Self-raising Flour
•⅓ cup grated Parmesan or Cheddar
•Salt & Pepper
•Olive Oil, for frying
Lemon Yoghurt:
•½ cup Greek Yoghurt
•Zest of ½ Lemon
•Squeeze of Lemon Juice
•Pinch of Salt
Method
1) Mix – In a bowl, combine all fritter ingredients until just mixed.
2) Fry – Heat a little olive oil in a frying pan. Drop in spoonfuls of batter, flatten slightly, and cook until golden on both sides.
3) Whip the yoghurt – Mix all lemon yoghurt ingredients together until smooth.
4) Serve – Dollop yoghurt over fritters and enjoy hot.
