Christmas Ham & Cheddar Cheese Frittata

This Christmas Ham Frittata is made in one pan and on the table in under 20 minutes, transforming leftover Christmas Ham into a light yet satisfying dish. Pair it with peppery rocket and fennel salad, and you’ve got the perfect brunch, lunch, or light dinner without breaking a sweat.

Ingredients

• 8 large free-range eggs
• Splash of cream (2–3 tbsp)
• 1 cup leftover Christmas ham, chopped
• 1 cup grated cheddar cheese
• Olive oil, for frying
• Sea salt & cracked black pepper, to taste

To serve:
Rocket & fennel salad, lightly dressed

Method

1) Preheat – Heat oven to 180°C.
2) Mix – In a large bowl, whisk eggs with cream. Stir in ham and cheddar.
3) Start cooking – Heat olive oil in an oven-safe frying pan over medium heat. Pour in egg mixture and cook 1–2 minutes until base begins to set.
4) Bake – Transfer pan to oven and bake 8–10 minutes until just set in the centre.
5) Finish & serve – Season with salt and pepper. Slice and serve warm with rocket and fennel salad.
