Melon, Burrata & Prosciutto
This traditional Melon, Burrata & Prosciutto plate
brings together the flavours of an Italian summer. Juicy rockmelon, soft
burrata and paper-thin Re & Sons Prosciutto are served with a drizzle of
honey, thyme and chilli dressing for a gentle touch of sweetness and spice.
Best shared as a light starter on warm afternoons or as part of a long,
leisurely lunch with friends.
Ingredients:
- ½
rockmelon, cleaned and sliced
- 150g
Re & Sons Prosciutto
- 1
burrata
- Fresh
or toasted bread, to serve
Honey, Thyme & Chilli Dressing:
- 100ml
extra virgin olive oil (EVOO)
- 1
tsp honey
- ½
tsp chilli flakes (or to taste)
- 1
tbsp lemon juice
- Fresh
thyme sprigs
- Sea
salt
Method:
1) Arrange
the rockmelon slices, prosciutto and burrata on a serving plate.
2) Lightly
season the burrata with sea salt.
3) In a
small bowl, whisk together olive oil, honey, chilli flakes, lemon juice,
thyme and a pinch of salt.
4) Serve
the dressing alongside the antipasto with slices of fresh focaccia or
toasted bread.
5) Enjoy
immediately - ideally outdoors, with a glass of chilled white wine!
