Lombo, Pecorino & Sweet Summer Peaches

A little Italian summer on a plate

You’ll need:
Thinly sliced Re & Sons Lombo
Pecorino, finely sliced
Ripe summer peaches
Extra virgin olive oil
Freshly cracked black pepper
A little sea salt
Crusty Italian bread, to serve

Start with the Lombo
For the best result, head to a good Italian deli and look for Re & Sons Lombo. Ask them to slice it thinly for you - they'll know exactly how to get it right.
Having it sliced fresh makes all the difference. You want the Lombo delicate enough to fold across the plate, but with enough texture and flavour to stand up to the sweetness of the peaches and sharpness of the pecorino.

How to make it
Start with your prettiest platter. This is a dish that should look generous and relaxed, so don't worry about making everything too perfect.
Lay the Lombo across the plate, folding or gently twisting the slices so they have plenty of texture. Slice your peaches into generous wedges and scatter them over the top.Tuck in the slices of pecorino.
Drizzle with good extra virgin olive oil, then finish with plenty of freshly cracked black pepper and just a touch of sea salt.
Serve with crusty Italian bread for tearing, dipping and mopping up every last drop.
