Bacon and Eggs Cups
These super cute
Bacon & Egg cups are full of flavour and perfect for breakfast
entertaining.
Ingredients
SERVES 4
4 rashers of Re & Sons quality Bacon. These can be
sliced in half depending on the size of your muffin tray.
4 large Eggs
Parmesan Cheese
Salt & Pepper for seasoning
Chives
Method
Step 1
Preheat
oven to 200°C.
Lightly
fry bacon – as it will continue cooking later in the oven.
Once
lightly fried place bacon around the edges of non-stick muffin tin, wrapping
bacon in a circle.
Step 2
Crack an egg into the middle of the bacon. Season
with Salt and Pepper and a little Parmesan Cheese.
Step 3
Place
muffin tin in the oven and cook for approx 10 minutes or until egg yolks reach
your desired consistency.
Step 4
Run
a knife around the edge of each cup to loosen and remove. Sprinkle with chives
and enjoy.
